<p>OATS FOR BREAKFAST</p>
<p>Oats is so healthy.  Try and have it twice a week.  Replace Sunday Egg and Bacon with this luxury version of oats.</p>
<p>INGREDIENTS:</p>
<p>1 cup oats</p>
<p>2 cups water</p>
<p>Scant quarter Teaspoon salt.</p>
<p>Add the above together and soak overnight.</p>
<p>1 cup fresh cream</p>
<p>1 tot whisky</p>
<p>Syrup or honey or dark brown sticky sugar- to your taste</p>
<p>Milk</p>
<p>Half cup of almond nuts cracked</p>
<p> </p>
<p>METHOD</p>
<p>Place the soaked oats and any liquid that may remain in a pot.  If the mixture is stiff, add milk and bring to a gentle rolling boil until the oats are soft and it forms porridge texture.  If it remains too stiff, just add more milk.  Stir in the whisky and half of the cream.</p>
<p>Dish up into bowls (2) and add an extra dash of cream on top of the porridge.  Pour on syrup or dredge with dark brown sticky sugar.  Top with cracked almond nuts.</p>

<p>Great easy recipe for tonight: Monday 19th May, 2008</p>
<p>PESTO</p>
<p>Ingredients:</p>
<p>2 big handfulls basil leaves, chopped finely</p>
<p>Half a lemon squeezed</p>
<p>Half cup pine nuts</p>
<p>Half cup grated parmesan or peccorino cheese</p>
<p>Half cup extra virgin olive oil</p>
<p>Two big cloves of garlic &#8211; crushed</p>
<p>Generous pinch of salt and a grind of pepper.</p>
<p>Method:</p>
<p>Put all ingredients (except the olive oil and cheese) into a blender or pound by hand &#8211; till a fine paste is formed.  Stir in cheese.  Gradually add olive oil, teaspoon by teaspoon, and continue to blend until all the oil is used up.</p>
<p>Bravo, you have pesto!</p>
<p>Mix into freshly cooked pasta of your choice.  Top with more parmesan and a splash of olive oil.  Also nice on croistini or mixed into savoury scone mixture.  Nice just to eat a teaspoon full when no one is looking!  Wash down with pinot grigio wine.</p>
